Ina Garten's Coconut Cake

This summer, we've decided that in addition to filming our own baking videos, we are going to bake recipes from some of the Food Network's biggest stars and review them. Our recipe reviews are based on the following criteria:

  • Looks

  • Taste

  • Ease of Instructions

  • Did We Want Seconds?

Since it is the beginning of summer, we wanted to try something summery. So, first up ... Ina Garten's Coconut Cake! We were super excited because her cake looked light and round and fluffy! And, most importantly: COCONUTTY!!! We used her Recipe to make it step by step.

Looks:

When we finished making the cake, it was gorgeous in bright white coconut (it almost looked too good to eat, but we're reviewing it so . . . we had no choice)! Putting on all the coconut may have taken a while, but it was worth it in the end! When we cut open the cake it looked like a vanilla sponge and NOW we just had to try it! So for looks we gave it . . . 5 out of 5 stars!


Taste:

The cake itself was light and fluffy and it had just enough coconut flavor to balance out the addition of almond extract. Our favorite part was when we would come across some coconut flakes in the cake. That being said, the cake was a slight bit drier than we thought it would be, but other than that minor detail, it was nearly perfect. The frosting on the cake was DELICIOUS!!! The cream cheese mellowed out the powdered sugar and the sweetened coconut layered on top. The cake and the frosting together made a nice combination. The next time we make it, we would add a bit more frosting between layers to help avoid the dryness. For the tastes of Ina Garten's Coconut Cake, we gave it . . . 4 out of 5 stars!


Ease of Instructions:

Making this coconut masterpiece was not a hard process. The instructions explained everything well and even told us what things should look like once finished. We only had trouble with one small thing: getting the frosting to smooth out to the right consistency was tricky because the recipe didn't tell us how long we should mix it. But, that's where our baking instincts took over! So, for ease of instructions, we gave Ina Garten's Coconut Cake . . . 4.5 out of 5 stars!


Did We Want Seconds?:

Oh we wanted seconds all right, but because the cake was a bit filling for our stomachs, we (sadly) decided not to have more. We give the most important category . . . 4 out of 5 stars!


So, overall, Ina Garten's Coconut Cake earned a delicious average of . . .

4.375 out of 5 stars!!!


Please try to make this summery cake at home with your family! Trust us, it's fun to sprinkle coconut on a cake, and then eat it immediately afterwards!
